A new season is just around the corner. On September 17, Restaurant Gallis at Glass Resort will open its doors once again, welcoming guests to experience the flavors of autumn in Lapland.

As summer turns into autumn, our new menu celebrates the richness of the season through warm flavors, northern ingredients, and the best of the local harvest.

Many familiar Gallis ingredients return to the menu, including fish from Lake Miekojärvi, wild forest mushrooms, reindeer, Finnish berries, and local honey. Alongside these favorites, the new season introduces fresh ingredients and interpretations, from hand-dived Norwegian scallops to our take on a classic Wellington, this time made with reindeer.

Willow grouse also makes its return, appearing in several dishes throughout the menu. A true northern ingredient, its distinctive flavor brings a taste of the Lappish wilderness to the autumn menu.

For Head Chef Joona Ahonen, the new menu brings together everything that defines Gallis.

“I think our new menu is a complete expression of what Gallis represents: beautiful northern ingredients, a relaxed approach, craftsmanship, and, above all, delicious food.

It is difficult to choose just one dish, but if I were dining at Gallis right now, I would start by sharing a few snacks around the table. For a starter, I would choose the scallop, followed by the grilled willow grouse, and for dessert, it would have to be the Tarte Tatin, one of my all-time favorites, served with meadowsweet caramel and milk ice cream.”

The new season at Gallis is a celebration of autumn in Lapland, its harvest, its landscapes, and the distinctive flavors of the North. Above all, it is about gathering around the table and enjoying good food in a warm and relaxed atmosphere.
